Spicy Pumpkin Soup

This is my favorite pumpkin soup recipe. It’s a modified version of Spicy Coconut and Pumpkin Soup from

1 T olive oil
1 medium onion, chopped
½ t minced garlic
1 inch fresh ginger
1 t ground cumin
1 t ground tumeric
1/2 t. cayenne pepper
1 T chicken boullion
3 c water
2 cups fresh cooked pumpkin or 1 15 oz can pureed pumpkin
1 ½ c milk, coconut, dairy or almond
salt and pepper
cilantro or roasted pumpkin seeds for garnish

  1. Saute the onions and spices in olive oil til the onion becomes translucent
  2. add the boullion and water, bring to a boil
  3. add the pumpkin and milk until heated through, simmer for about 10 minutes
  4. add salt and pepper for taste, top with cilantro or roasted pumpkin seeds

Pumpkin is high in Vitamin A, which makes it good for vision. It’s also low in calories and high in fiber.

Pumpkin is a winter squash.  Other winter squashes you could use to make this recipe include butternut, acorn, sweet dumpling, and blue hubbard.
