Roasted Asparagus with Hard-Boiled Egg
One bunch of asparagus, one of the first local vegetables!
One hard-boiled egg, chopped
1t dried thyme, or 1 T fresh thyme
salt and pepper
Preheat oven to 400 degrees.
Wash spears. Snap one inch off stems. Transfer to baking pan.
Drizzle with olive oil, and sprinkle with thyme, salt and pepper, stir to coach
Bake for 20-30 mins
Turn down heat to 350 degrees.
Bake for another 10 minutes or until desired tenderness!
Remove from oven and transfer to a serving plate. Sprinkle egg overtop.
