Cucumber Soup

Cucumber soup

2 cucumbers, peeled and chopped
1 and ⅔ cup plain Greek yogurt
¼ cup chopped scallions (can include greens)
3 T lemon juice
2 T olive oil
2 t. dried dill

¼ t minced garlic
½ t pepper or to taste
¼ t salt


Place all items in blender. Pulse until desired consistency. Refrigerate at least 1 hour and up to overnight. Season with additional salt and pepper.
